Favourite Summer Cocktails

The weather has inspired us to rename this months Coffee Corner to Frappuccino Corner! This month we will be covering two favourite summer cocktails and their recipes; they do include alcohol so please measure your amounts responsibly!

Pimms

Pimms Cocktail

The classic British Summer drink is of course a glass of Pimms, delightfully delicious on those hot summer days when out with friends. Always served at big events like Wimbledon, Ascot races and your backyard! Anyone for Pimms? If you’ve never made it before see the recipe for one tall glass here:

  • Mix one part of Pimms Original and three parts lemonade.
  • Slice some strawberries, cucumber and oranges but don’t fill the whole glass.
  • Add some mint.
  • …and voila it’s Pimms O’clock.
Mojito

Mojito Cocktail

A Mojito cocktail is the perfect summer drink with the refreshing hit of lime and mint. Tantalizingly fresh and punchy Mojito’s reputation is grand, a popular and much-loved drink worldwide. To prepare this drink get the ingredients ready; 2 limes sliced into wedges, handful of fresh mint leaves, 2 tablespoons of sugar, 1 and 1/4 part white rum, soda water and ice at the ready? Ok:

  • Place the lime, mint leaves and sugar in a sturdy glass.
  • Crush to bruise the mint and release the lime juice.
  • Add the ice and pour over the rum and soda water to taste.

Yummy Mojito the thirst-quencher!
